Simple recipe for stir-fried prawns with mango and rice
Discover an easy recipe for stir-fried prawns with mango and rice.
Ingredients - for 4 people
- 360g prawns
- 1 mango
- 1 onion
- 20g ginger
- 2 red peppers
- a few sprigs of coriander
- 240g rice
- olive oil
- Cayenne pepper powder
- salt and pepper
Preparation
- Place the rice in a pan of salted water and cook for 10 minutes from the boil.
- Chop the onion and mince the ginger. (Reduce the amount of ginger if you like a milder flavour).
- Wash and dice the peppers. Chop the coriander.
- Heat 1 tbsp olive oil in a frying pan or sauté pan and sauté the onion and ginger for 2 mins.
- Add the diced peppers and cook for a further 10 mins, stirring occasionally.
- Peel and dice the mango.
- Drain the rice.
- Add the mango cubes and prawns to the pan, season with salt and pepper and fry for 5 mins.
- Sprinkle with the coriander. Serve immediately with the rice.
