prawn wok with vegetables and cashew nuts

Ingredients - for 4 people

  • 360g peeled prawns
  • 1 small onion
  • 1 clove garlic
  • 1kg courgettes
  • 1 red pepper
  • 50g cashew nuts
  • 2 tbsp honey
  • 6 tbsp soy sauce
  • olive oil
  • salt and pepper

Preparation

  1. Peel and finely chop the onion and garlic.
  2. Wash the courgettes and pepper and cut into small cubes.
  3. Heat a wok (or large frying pan) with 2 tbsp olive oil over a high heat and fry the onion and garlic. Add the courgettes and pepper and mix well. Add the soy sauce and honey and cook for 15 to 20 minutes over a low heat, covered.
  4. Coarsely chop the cashew nuts (without blending them) and fry until golden brown in a dry frying pan for a few minutes.
  5. Pour the prawns into the wok and cook for a further 5 minutes to reheat them. Adjust the seasoning if necessary.
  6. Sprinkle with the golden cashew nuts and serve immediately!
