prawn wok with vegetables and cashew nuts

Ingredients - for 4 people
- 360g peeled prawns
- 1 small onion
- 1 clove garlic
- 1kg courgettes
- 1 red pepper
- 50g cashew nuts
- 2 tbsp honey
- 6 tbsp soy sauce
- olive oil
- salt and pepper
Preparation
- Peel and finely chop the onion and garlic.
- Wash the courgettes and pepper and cut into small cubes.
- Heat a wok (or large frying pan) with 2 tbsp olive oil over a high heat and fry the onion and garlic. Add the courgettes and pepper and mix well. Add the soy sauce and honey and cook for 15 to 20 minutes over a low heat, covered.
- Coarsely chop the cashew nuts (without blending them) and fry until golden brown in a dry frying pan for a few minutes.
- Pour the prawns into the wok and cook for a further 5 minutes to reheat them. Adjust the seasoning if necessary.
- Sprinkle with the golden cashew nuts and serve immediately!
