Oriental Chickpea & Tuna Salad Bowl

Oriental Chickpea & Tuna Salad Bowl

A balanced Oriental bowl with chickpeas, tuna, and toasted pine nuts.

Ingredients - for 4 people

  • 1 tin (800g) chickpeas
  • 3 tomatoes
  • 1 onion
  • 50g pine nuts
  • 100g mixed salad leaves
  • 1 tin of tuna
  • Olive oil
  • A few sprigs of coriander
  • Cumin
  • Salt & pepper

Preparation

  1. Rinse and drain the chickpeas thoroughly.
  2. Toast the pine nuts in a dry pan until golden.
  3. Dice the tomatoes and finely slice the onion. Chop the coriander. Wash and dry the salad leaves.
  4. In a large bowl, combine the chickpeas, tomatoes, and onion.
  5. Drizzle with olive oil, add the cumin, salt, and pepper, and mix well.
  6. Add the toasted pine nuts, mixed salad leaves, drained tuna, and coriander. Mix again.
  7. Serve and enjoy!
