Oriental Chickpea & Tuna Salad Bowl
A balanced Oriental bowl with chickpeas, tuna, and toasted pine nuts.
Ingredients - for 4 people
- 1 tin (800g) chickpeas
- 3 tomatoes
- 1 onion
- 50g pine nuts
- 100g mixed salad leaves
- 1 tin of tuna
- Olive oil
- A few sprigs of coriander
- Cumin
- Salt & pepper
Preparation
- Rinse and drain the chickpeas thoroughly.
- Toast the pine nuts in a dry pan until golden.
- Dice the tomatoes and finely slice the onion. Chop the coriander. Wash and dry the salad leaves.
- In a large bowl, combine the chickpeas, tomatoes, and onion.
- Drizzle with olive oil, add the cumin, salt, and pepper, and mix well.
- Add the toasted pine nuts, mixed salad leaves, drained tuna, and coriander. Mix again.
- Serve and enjoy!
