Hearty Oriental Chickpea Salad – Radishes
A crunchy and flavourful chickpea salad, perfect warm or cold.
Ingredients - for 4 people
- 800g chickpeas
- 400g tomatoes
- 1 onion
- 40g sunflower seeds
- A few sprigs of coriander
- 60g rocket
- 1 bunch of radishes
- Cumin or another spice of choice
- Olive oil
- Salt & pepper
Preparation
- Rinse and drain the chickpeas thoroughly.
- Dice the tomatoes and finely chop the onion. Chop the coriander. Wash and dry the rocket.
- In a large bowl, combine the chickpeas, tomatoes, and onion.
- Add the sunflower seeds, rocket, and coriander, then mix well. Taste and adjust the seasoning.
- Wash and prepare the radishes.
- Serve the radishes as a starter and the chickpea salad as a main dish.
