Hearty Oriental Chickpea Salad – Radishes​

Hearty Oriental Chickpea Salad – Radishes

 A crunchy and flavourful chickpea salad, perfect warm or cold.

Ingredients - for 4 people

  • 800g chickpeas
  • 400g tomatoes
  • 1 onion
  • 40g sunflower seeds
  • A few sprigs of coriander
  • 60g rocket
  • 1 bunch of radishes
  • Cumin or another spice of choice
  • Olive oil
  • Salt & pepper

Preparation

  1. Rinse and drain the chickpeas thoroughly.
  2. Dice the tomatoes and finely chop the onion. Chop the coriander. Wash and dry the rocket.
  3. In a large bowl, combine the chickpeas, tomatoes, and onion.
  4. Add the sunflower seeds, rocket, and coriander, then mix well. Taste and adjust the seasoning.
  5. Wash and prepare the radishes.
  6. Serve the radishes as a starter and the chickpea salad as a main dish.
