Basque chicken
Ingredients for 2 persons
- 1 garlic clove
- 1 onion
- 2 or 3 Espelette peppers
- 2 bell peppers
- Chicken pieces
- 3 tomatoes
- Olive oil
- Salt and pepper
- Thyme
Preparation
- In a large pot, sauté the garlic, onion, bell peppers, and Espelette peppers sliced into strips with olive oil.
- Add the chopped tomatoes, thyme, salt, and pepper.
- Let it simmer for about 25 minutes to allow the flavors to meld.
- Meanwhile, cut the chicken into pieces.
- In a skillet, brown the chicken pieces in olive oil until they are well browned.
- Once the chicken is cooked, mix it with the other ingredients in the pot.
- Let it simmer for another 15 minutes so the chicken absorbs the flavors.
- Serve hot and enjoy your Basque chicken!
