Basque chicken


Ingredients for 2 persons

  • 1 garlic clove
  • 1 onion
  • 2 or 3 Espelette peppers
  • 2 bell peppers
  • Chicken pieces
  • 3 tomatoes
  • Olive oil
  • Salt and pepper
  • Thyme

Preparation

  • In a large pot, sauté the garlic, onion, bell peppers, and Espelette peppers sliced into strips with olive oil.
  • Add the chopped tomatoes, thyme, salt, and pepper.
  • Let it simmer for about 25 minutes to allow the flavors to meld.
  • Meanwhile, cut the chicken into pieces.
  • In a skillet, brown the chicken pieces in olive oil until they are well browned.
  • Once the chicken is cooked, mix it with the other ingredients in the pot.
  • Let it simmer for another 15 minutes so the chicken absorbs the flavors.
  • Serve hot and enjoy your Basque chicken!
