Pancakes with lemon cream and lemon basil

Ingredients - for 4 people

  • 2 yellow lemons
  • 2 limes
  • 100g brown sugar
  • About fifteen Véritable lemon basil leaves
  • 3 eggs
  • A tablespoon of cornflour

Preparation

  1. Wash the lemons and remove a few zests. Squeeze the 4 lemons. Place the zest and juice in a saucepan with the chopped basil leaves. Heat without boiling for 2 minutes, then turn off the heat and cover for 5 minutes. Strain the mixture and return the juice to the pan.
  2. Add the sugar and cornflour. Whisk gently over a low heat.
  3. In a bowl, whisk the two eggs and add them to the saucepan while whisking and increasing the heat.
  4. Whisk until the mixture thickens and becomes a cream.
  5. Remove from the heat and pour the cream into a jar and leave to cool.
  6. Spread as much lemon basil cream on your pancakes as you like.
