Mixed cereals with baby vegetables

Vegetable cream is a good alternative to traditional cream because it is lower in fat. Here we suggest rice cream, but there are others: soya, spelt, almond, millet, etc. Their taste is fairly neutral and they add the creaminess of cream to your cooked dishes.

Ingredients - for 4 people

  • 250g cereal mix (wheat, spelt wheat, barley, lentils, split peas)
  • 50g sultanas
  • 10-15cl vegetable rice cream
  • 3 carrots
  • 3 tomatoes
  • 1 tbsp spices of your choice (curry, paprika, coriander, cumin)
  • 1 tbsp dried herbs of your choice (marjoram, oregano, rosemary, fennel)
  • 1 tbsp soy sauce or tamari
  • A few sprigs of basil
  • A few sprigs of parsley or coriander
  • Olive oil
  • Salt and pepper

Preparation

  1. Peel the carrots, cut into fine sticks and fry for approx. 10 mins in a frying pan over a low heat with a drizzle of olive oil. Season with salt.

  2. Dice the tomatoes and season with olive oil, salt and pepper. Set aside.

  3. Cook the cereal mixture in plenty of boiling water for 10 minutes, then drain. Stir in the raisins.

  4. Add the spices and dried and fresh herbs of your choice. Add the soy sauce (or salt) and cream of rice. Stir and leave off the heat, covered, for 2 to 3 minutes.

  5. Serve with raw and cooked vegetables.
