Simple recipe for stir-fried prawns with mango and rice

Discover an easy recipe for stir-fried prawns with mango and rice. 

Ingredients - for 4 people

  • 360g prawns
  • 1 mango
  • 1 onion
  • 20g ginger
  • 2 red peppers
  • a few sprigs of coriander
  • 240g rice
  • olive oil
  • Cayenne pepper powder
  • salt and pepper

Preparation

  1. Place the rice in a pan of salted water and cook for 10 minutes from the boil.
  2. Chop the onion and mince the ginger. (Reduce the amount of ginger if you like a milder flavour).
  3. Wash and dice the peppers. Chop the coriander.
  4. Heat 1 tbsp olive oil in a frying pan or sauté pan and sauté the onion and ginger for 2 mins.
  5. Add the diced peppers and cook for a further 10 mins, stirring occasionally.
  6. Peel and dice the mango.
  7. Drain the rice.
  8. Add the mango cubes and prawns to the pan, season with salt and pepper and fry for 5 mins.
  9. Sprinkle with the coriander. Serve immediately with the rice.
