Beef bobun

Discover this delicious and comforting recipe

Ingredients - for 4 people

  • 400g beef steak
  • 2 stalks lemongrass
  • 250g rice vermicelli
  • a few batavia leaves
  • 3 carrots
  • A few mint leaves
  • A few sprigs of coriander
  • 1 nem sauce
  • Neutral oil
  • Salt and pepper

Preparation

  1. Cut the beef into strips. Remove the outer skin from the lemongrass stalks and chop very finely.
  2. Place the beef strips in a bowl with the lemongrass, season with salt and pepper and set aside.
  3. Meanwhile, cook the vermicelli for 2-3 minutes in simmering water. Drain once cooked.
  4. Chop a few salad leaves. Chop the coriander.
  5. Peel and grate the carrots.
  6. Heat 3 tbsp oil over high heat in a large frying pan and sear the beef for 2-3 minutes (no more).
  7. Add a little salt and pepper if necessary.
  8. Place some of the chopped salad and rice vermicelli in large bowls. Finish with the grated carrots and meat and sprinkle with a few minced mint leaves and coriander.
  9. Drizzle with the sauce and mix to enjoy the dish.
