Soba noodles with mushrooms and sweet cabbage

Ingredients - for 4 people
- 300g Soba noodles
- 500g button mushrooms
- 1 half cabbage
- 3 cloves of garlic
- 4 tbsp soy sauce
- 1 piece of ginger (approx. 30g)
- A few sprigs of Chinese chives
- 5 tbsp neutral oil
- Sesame oil and sesame seeds (optional)
- Salt and pepper
Preparation
- Peel and chop the garlic and ginger.
- Rinse the mushrooms and cut into 2 or 4 depending on their size.
- Fry the chopped garlic and ginger in 1 tbsp oil in a large frying pan for 1 minute. Add the mushrooms and brown over a medium heat for 4 or 5 minutes.
- Bring a pan of salted water to the boil. Cook the soba noodles in boiling water for 3 mins.
- Check for doneness and drain once cooked.
- Set aside.
- Cut the sweet cabbage into thin strips and add to the mushrooms. Season with salt and pepper, then cook covered over a low heat for 5-7 mins.
- Add the soba noodles, season with soy sauce, pepper and 4 tbsp neutral oil or sesame oil. Mix well, sprinkle with sesame seeds (optional) and serve immediately.
