Spring salad with young shoots Véritable

Véritable Spring salad

Here's a fresh, colorful salad for spring! A few young shoots from your Véritable® kitchen garden, plus pretty petunia flowers for a perfect light meal!

Ingredients - for 2 people

  • 200 g plain buckwheat seeds
  • 2 carrots
  • A dozen pink radishes
  • One small cucumber
    75 g Véritable® baby greens (arugula, lettuce, etc.)
  • Olive oil
  • Mustard
  • Balsamic vinegar
  • salt and pepper
  • A few Veritable® Petunia flowers

Preparation

  1. Bring a large quantity of salted water to the boil in a saucepan. Once the water is simmering, plunge in the buckwheat and cook for 10 to 15 min. Then remove the pan from the heat, drain the seeds and rinse under cold water.

  2. Clean the vegetables, peel them and cut them into strips, cubes or slices.


  3. Harvest the petunia flowers and young shoots from your garden at the last minute.


  4. Garnish your salad with the petunia blossoms for a poetic touch.


  5. Season with a little vinaigrette (a mix of olive oil, balsamic vinegar and mustard with salt and pepper).
