Tournedos pizzaiola style, sautéed vegetables

Italians cook this recipe all year round with tinned tomatoes.

Ingredients - for 4 people

  • 4 tournedos steaks
  • 1 tin of crushed tomatoes
  • 1 onion
  • 500g carrots
  • 1 broccoli
  • olive oil
  • Oregano or herbes de Provence or thyme
  • salt and pepper

Preparation

  1. Heat a drizzle of olive oil in a frying pan and sauté the onion over a low heat. Peel and finely dice the carrots and add to the onion mixture.
  2. Rinse the broccoli and cut into florets, add to the onion-carrot mixture. Season with salt and pepper. Cook over a medium heat for 10 to 15 minutes.
  3. Heat a drizzle of olive oil in a non-stick frying pan and sear the tournedos over a high heat for 2 to 3 minutes on each side. Season with salt and pepper and set aside.
  4. Add the crushed tomatoes with a drizzle of olive oil and oregano to the pan in place of the tournedos, season with salt and pepper and simmer for 10 minutes. Return the tournedos to the pan just to warm them up.
  5. Serve the tournedos à la pizzaïola with the sautéed vegetables.
