Italian-style escalope with fresh pasta and thyme

Discover a simple recipe for Italian-style turkey escalope with fresh thyme pasta. Ready in just 30 minutes, it's sure to delight your friends and family.

Ingredients - for 4 people

  • 4 turkey escalopes
  • 1 ball mozzarella
  • 200g spinach
  • 20cl tomato coulis
  • a few sprigs of thyme
  • 4 slices of cured ham
  • 400g fresh pasta

Preparation

  1. Preheat your oven to 220°C.
  2. Wash the spinach and remove the thickest stems. Melt the spinach leaves in a large frying pan with a drizzle of olive oil for 3-4 minutes, stirring constantly. Season with salt and pepper. Drain and set aside.
  3. In the same pan, add a drizzle of olive oil and brown the turkey escalopes for 3-4 minutes on each side. Season with salt and pepper.
  4. Bring a large quantity of salted water to the boil for the pasta.
  5. Cut the mozzarella into thin slices.
  6. Pour the tomato coulis into an ovenproof dish and add the sprigs of thyme. Add the cutlets, then place a slice of ham on top, followed by a little spinach and slices of mozzarella. Place in the oven for a few minutes until the mozzarella has melted.
  7. Cook the tagliatelle in boiling water for the time indicated on the packet. Drain and drizzle with olive oil.
  8. Serve the Italian-style escalopes with the tagliatelle.
