Beef bobun

Ingredients - for 4 people
- 400g beef steak
- 2 stalks lemongrass
- 250g rice vermicelli
- a few batavia leaves
- 3 carrots
- A few mint leaves
- A few sprigs of coriander
- 1 nem sauce
- Neutral oil
- Salt and pepper
Preparation
- Cut the beef into strips. Remove the outer skin from the lemongrass stalks and chop very finely.
- Place the beef strips in a bowl with the lemongrass, season with salt and pepper and set aside.
- Meanwhile, cook the vermicelli for 2-3 minutes in simmering water. Drain once cooked.
- Chop a few salad leaves. Chop the coriander.
- Peel and grate the carrots.
- Heat 3 tbsp oil over high heat in a large frying pan and sear the beef for 2-3 minutes (no more).
- Add a little salt and pepper if necessary.
- Place some of the chopped salad and rice vermicelli in large bowls. Finish with the grated carrots and meat and sprinkle with a few minced mint leaves and coriander.
- Drizzle with the sauce and mix to enjoy the dish.
