Mixed cereals with baby vegetables
Vegetable cream is a good alternative to traditional cream because it is lower in fat. Here we suggest rice cream, but there are others: soya, spelt, almond, millet, etc. Their taste is fairly neutral and they add the creaminess of cream to your cooked dishes.
Ingredients - for 4 people
- 250g cereal mix (wheat, spelt wheat, barley, lentils, split peas)
- 50g sultanas
- 10-15cl vegetable rice cream
- 3 carrots
- 3 tomatoes
- 1 tbsp spices of your choice (curry, paprika, coriander, cumin)
- 1 tbsp dried herbs of your choice (marjoram, oregano, rosemary, fennel)
- 1 tbsp soy sauce or tamari
- A few sprigs of basil
- A few sprigs of parsley or coriander
- Olive oil
- Salt and pepper
Preparation
- Peel the carrots, cut into fine sticks and fry for approx. 10 mins in a frying pan over a low heat with a drizzle of olive oil. Season with salt.
- Dice the tomatoes and season with olive oil, salt and pepper. Set aside.
- Cook the cereal mixture in plenty of boiling water for 10 minutes, then drain. Stir in the raisins.
- Add the spices and dried and fresh herbs of your choice. Add the soy sauce (or salt) and cream of rice. Stir and leave off the heat, covered, for 2 to 3 minutes.
- Serve with raw and cooked vegetables.
